Cottage Cheese Oat Pancakes
These easy Cottage Cheese Oat Pancakes are a simple way to add more protein and whole grains to your morning. With just five ingredients, they blend together in minutes and make a satisfying breakfast for busy mornings.
Makes 3–4 medium pancakes
Ingredients
½ cup (4.6 oz / 130 g) 4% cottage cheese
⅓ cup (1.4 oz / 40 g) oat flour*
1 large egg
1 teaspoon baking powder
1 teaspoon vanilla extract
*No oat flour? Simply grind old-fashioned rolled oats in a blender or food processor until they reach a flour-like consistency.
Directions
Add the cottage cheese, oat flour, egg, baking powder, and vanilla to a blender.
Blend until smooth and well combined.
Heat a nonstick skillet or griddle over medium-low heat and lightly grease if needed.
Pour the batter onto the skillet to form 3–4 medium pancakes.
Cook until the edges begin to set and the bottoms are golden, then flip.
Cook the second side until golden brown and cooked through.
Serve warm with your favorite toppings.
Make Them Your Own
Try them with fresh berries, sliced banana, Greek yogurt, nut butter, cinnamon, or a drizzle of maple syrup.
